Chef de Cuisine Jana Billiot oversees kitchen operations at Restaurant R’evolution in the Royal Sonesta Hotel on Bourbon Street. A native of Johnson Bayou, Louisiana, Chef Billiot trained at the Chef John Folse Culinary Institute at Nicholls State University and honed her culinary skills in Chicago before joining the Restaurant R’evolution team in 2010. In 2019 she was recognized as one of Louisiana Cookin’ magazine’s Chefs to Watch.
